This week I have decided to make Chocolate and Banana Bread. This recipe is super easy and quick and it a great way to use up bananas which may be over ripe. The kids love it and so do I!
- 125g self raising flour
- 125g caster sugar
- 125g soft butter/margerine
- 2 eggs
- 2 bananas mashed (preferably ripe ones)
- 3 tablespoons of Macabella chocolate spread
Preheat oven to gas mark 5
Grease a baking tin. I used a standard bread tin this time.
In a bowl, add the sugar and butter and cream together until soft.
Once this has been done, add one third of the flour along with 1 egg and give a good mix until all the ingredients are blended together.
Repeat. Add another third of the flour and the other egg and continue to mix.
Then, add the mashed banks, the remainder of the flour and the chocolate spread. Continue to mix well until all the ingredients are well blended and mixed up.
Once this is done, pour the mixture into the baking tin.
Place in the oven and cook for 40 minutes.
Remove from the oven and allow to cool before slicing.
Then make a cup of the and eat!
